First attempt at a freezer meal


My husband loves my jambalaya pasta, but the recipe always makes too much. After reading about freezer meals, I though I'd try to freeze half of it.
Here's the recipe:
1/3 cup olive oil
1 pound boneless skinless chicken breast, cut into 1 inch cubes
Salt and pepper
5 stalks of celery, chopped
1 medium green bell pepper, stem and seeds removed, chopped
1 medium red onion
4 cloves garlic
1 pound kielbasa sausage, cut into 1/2 inch slices (I use a light version)
3 cups chicken broth
1 and 1/2 cans crushed tomatoes (28 oz size)
3/4 cup water
1 and 1/2 tbsp old bay seasoning
1 box penne pasta

To make, sprinkle the chicken with salt and peppercorn cook in the olive oil about 5 minutes until cooked through. Remove the chicken, keeping oil in the pot. Add vegetables, cooking for about 5-10 minutes. Add garlic and sausage, cooking about 5 minutes. Add broth, water, tomatoes, and old bay. Cook until it bubbles. Add pasta, lower heat to low/ medium low and cover for about 10 minutes. Stir occasionally. Dish is finished when pasta is desired tenderness.

I split this into 2, half to eat now and tomorrow, and the other half to freeze. I put the freezer portion into a zip lock and we'll try it next week to see how it went.
